Anyone who knows me well, knows how much I love a good lunch! Over the years I've adopted my mommas recipe-less way of cooking...which basically involves me throwing good flavours together with the aim of making something scrummy.

This is one of my favourite lunches, especially after working out - a smashed avocado open sandwich with sweet veg. It's super quick to make, healthy, and also very filling.
I usually combine ingredients I feel like that day rather than using specific measurements, and I'll sometimes even throw in a poached or fried egg depending on how I'm feeling. Here's a mini breakdown of this bite sized heaven:

1 Wholemeal loaf
5 mini sweet tomatoes
3 spring onions
5 mini sweet peppers
1 avocado
1 tbsp pesto
balsamic vinegar 
Salt/pepper to taste

1. Chop up the avocado into small pieces then transfer it to a bowl. Mash it with a fork, then add the green pesto. Mix these two together until the mixture is soft but still slightly chunky.

2.  Chop up the tomatoes, peppers, and spring onions & fry in a tablespoon of olive oil until soft (about 2 minutes). Season the veg with salt and pepper, continue to fry for a minute, then take them off the heat

3. Cut the loaf into chunky slices and toast.

4. Spread the avocado pesto mix onto the toast, and top with the fried vegetables

5. Drizzle with balsamic vinegar
